Veggie Pizza Bread

My Go-To-Weeknight Dinner: Veggie pizza bread. Quick and easy to make and super yummy!

  • 6 Slices White Bread
  • 450 g Mushrooms
  • 1 Zucchini
  • 2 Bell Peppers
  • 4 TBSP Ricotta
  • 2 TBSP Tomato Paste
  • Scallions
  • 50 ml Crushed Tomatoes
  • 75 g Shredded Mozzarella
  • 2 Cloves Garlic
  • Salt
  • Pepper
  • Paprika
  • Oregano
  • Basil
  1. First, fry the scallions in some oil. Add the tomato paste and the crushed tomatoes and let simmer.
  2. In the meantime, chop the mushrooms, zucchini and bell peppers and place them in a large bowl. Add the tomato mixture, ricotta and mozzarella.
  3. Lastly, add in your garlic.
  4. Lay out the bread slices on a baking tray, spread with the mixture and then bake in the oven at 200°C for about 15 minutes.
